Summer Parmigiana
Summer Parmigiana

The Eggplant parmigiana  is quick and easy to prepare, as well as a light recipe! This is plate that provides the main ingredients of Eggplant parmigiana, but served cold. To have a parmigiana nice to see, try to choose mozzarella, Eggplant and tomatoes which have more or less the same size.

Ingredients: (for 4 people) 2 Sicilian Eggplant round 500 g mozzarella 500 g tomatoes (I have taken 2 large) Basil, salt, pepper, olive oil .
Wash the eggplants and cut them into thick slices about half a centrimetro.

Roasted eggplants for a few minutes.

When they are cold,  salt them.

Cut the tomatoes into slices about half a centimetre and sprinkle the pretzels.

Cut the mozzarella into slices about half a centimetre.

On a serving platter prepare the Eggplant parmigiana summer alternating a slice of Eggplant, a tomato, a slice of mozzarella cheese, chopped Basil and a little ' pepper.

Continue until you have the desired height and completed with a slice of Eggplant. Serve with a drizzle of raw oil.
